Settling into his new home, Ted spent years working in engineering, applying his skills and expertise to various projects.
From Engineering to Baking
In 2006, Ted noticed something was missing in Northern Ireland: authentic American cookies. Remembering the classic chocolate chip cookies his grandmother taught him to bake when he was just four years old, he saw an opportunity to bring a taste of the USA to his new home. With that inspiration, he made the bold decision to leave his engineering career and founded Big Ted's American Cookies.
The Birth of Big Ted's American Cookies
Starting from his own kitchen, Ted began baking cookies using all-natural ingredients, free from preservatives and artificial additives. Over time, he expanded his repertoire to include a variety of flavours such as blondie white chocolate, triple chocolate, Death by Chocolate, chocolate orange, classic American M&M's, and the cinnamon-infused Snickerdoodle.

In 2007, Ted brought his cookies to the local markets, starting in Coleraine. His delicious treats quickly gained popularity, and about two years later, he joined the Naturally North Coast & Glens Market. For over 17 years now, Ted has been a familiar face in the community, sharing his love for baking with locals and visitors alike.
Overcoming Challenges
Initially, Ted supplied his cookies to cafés up and down the coast, from Belfast to Dublin and along the North Coast. However, the credit crunch in 2010 posed significant challenges. Adapting to the changing economic landscape, he shifted his focus solely to market sales. This move allowed him to continue sharing his cookies directly with customers while navigating the tough financial times.
A Labour of Love with a Helping Hand
Ted isn't alone in his venture. His best friend, Alastair, who works at Wrightbus, helps him out on weekends. Ted himself balances his baking passion with a day job at Queen's University. Together, they make a dynamic duo, bringing joy to market-goers in Coleraine and Ballycastle. They were even a hit at the Air Show a couple of weeks ago, where their stall attracted crowds eager to taste their delightful creations.
Expanding the Reach
Beyond local markets, Big Ted's American Cookies has found its way into schools and corporate events. Ted supplies cookies for school fundraisers, helping educational institutions raise much-needed funds. He's also ventured into providing corporate cookies for events and weddings, adding a sweet touch to special occasions across Northern Ireland.

Using recipes passed down from his grandmother and insisting on all-natural ingredients, the cookies offer a genuine taste of America.
