The story behind Ocho Tapas is one of passion and expertise. Trudy and Sean Brolly, the founders of the restaurant, embarked on this venture in 2015 after pursuing successful careers in the catering industry.

Having spent 19 years in Spain, Trudy fell in love with the vibrant and diverse flavours of Spanish cuisine. She was eager to bring her culinary experiences and expertise back to Ireland, infusing her dishes with authentic Spanish flair.
