Led by the knowledgeable guide Wendy Gallagher, guests are encouraged to sit back, relax, and savour the unique flavours that define this area. Wendy Gallagher keeps the exact locations a surprise but promises guests will meet producers and visit several unique places. Chef Proprietor and Producer Gary Stewart is a leading figure in the culinary scene, organising popular events like Dine Around Bushmills and Bushmills Banquet in addition to his busy restaurant and producing his award-winning Distiller's sauce range.

Collaborating with others and showcasing local produce are core values for Gary and his talented team at Tartine.

Gary's menu blew away the most recent Coast and Country tour guests. Gary took the time to personally welcome the guests and guide them through the menu despite his busy schedule. The courses featured various delicious products, including Corndale Farm charcuterie with their incredible Ndjua ketchup served with a creamy ripe brie, Ursa Minor sourdough and Distillers pickle sauce. He prepared Bacon-wrapped chicken with a vegetable cassoulet from Vances Organic, Corndale chorizo and a drizzle of Broighter Gold truffle oil for the main course. 

Gary eagerly anticipates receiving a delightful assortment of fresh, organically grown vegetables each week from Vance's organic farm. This surprise veg box not only adds an element of excitement but also provides the perfect opportunity for Gary to unleash his culinary creativity. As a chef, he thrives on the challenge of crafting delicious dishes with the seasonal ingredients at hand. Embracing the concept of seasonal eating is vital for sustainability and adds a touch of magic to every meal.

The final course for the Coast and Country Tour guests was a tangy lemon posset accompanied by Gary's own Distillers raspberry and apple sauce with home-baked lavender shortbread.

Gary and Wendy have collaborated over many years. They recently announced that they would be working on several foodie events for the upcoming Bushmills Whiskey Festival weekend from the 6th – the 8th of October, 2023.

There will be a special Coast and Country tour,  Dine around Bushmills is back, and you can see Gary and Wendy, Paula McIntyre and other local chefs demonstrating their skills with more local produce on Sunday, 8th October 2023.
